Broccoli Juice & Benefits

I decided to juice some straight broccoli, just experimenting. I dont recommend juicing broccoli juice alone. It taste better when matched with another fruit or veggie. But I drank it anyways…wasn’t too bad. Here are some health enhancing benefits of this little green tree!

Pre-Digested Nutrients

Drinking broccoli juice enables you to take in large amounts of pre-digested nutrients, which gives your digestive system a rest. Juicing also makes it possible to ingest much more raw broccoli than you would eat at one sitting. It is easy to include an entire head of broccoli with carrots and an apple in a tall glass of juice, but eating the same head might be difficult.

Stomach Ailments

According to Juicing-for-Health.com, broccoli contains a substance called sulforaphane, which may be useful in assisting the body in preventing peptic ulcers. Broccoli juice can also ease gastritis and indigestion.

Bone Building

Compared ounce for ounce with milk, broccoli actually has more calcium, according to Iowa State University. The calcium in broccoli juice can help with the bone density problems many people experience as they get older. Broccoli juice is also a beneficial alternative to cow’s milk for those who are lactose intolerant.

Breast Health

Broccoli juice contains an anti-estrogenic compound known as glucosinolates. This compound helps the body rid itself of excess estrogen, which has been associated with elevated breast cancer risk, says Juicing-for-Health.com.

Eye Health

Juicing fresh broccoli can help protect your vision. Broccoli has high antioxidant levels, which can help keep your vision clear, as well as lutein, which helps protect against age-related macular degeneration. Combine broccoli and carrot juices for an even more powerful eye tonic.

Red Cabbage Guacamole

So my dad gave me a box full of avocados and the first thing I though of  making is guacamole. I love avocado , yes don’t we all? But they could be a little pricey at the store sometimes ranging $1 for 1-2 hass avocado.Whoa! So it was a nice treat to get a box for free. I love when people give me fruits or veggies they grow and have too much of (*hint*hint).

This guacamole has a little bit of everything.I left the seeds in mine because it help retain the pretty green color. You can’t tell in this guacamole though because I put some many things in it.I wanted to make it a little more dynamic and add texture with the red cabbage. Came out yummy.Avocado is high in fat so remember to eat it in moderation. 

Ingredients:

  • Shredded red cabbage ( I used a Ninja Blender)
  • Avocados * As many as you want
  • 1 cucumber
  • 3 serrano chiles
  • lemon juice
  • red pepper flakes
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cayenne
  • 1/2 medium onion, diced
  • 2 Roma tomatoes, seeded and diced
  • 1 tablespoon chopped cilantro
  • 1 clove garlic, minced

Healthy Veggies Stir Fry With Buckwheat Noodles

Soba buckwheat noodles remind me of Top Ramen noodles but healthier.This is a fast and easy to make asian tasting stir fry. I would of wanted to incorporate more veggies such as as celery, cabbage, edamame and shiitake mushrooms but I wasn’t willing to make the drive to the grocery store so I used what I had and it came out delicious. You could serve this cold or hot.

Ingredients

  • 8 ounces soba noodles
  • 1/2 cup Braggs amino acids (or low sodium soy sauce)
  • 1 teaspoon sesame oil
  • 2 tablespoons olive oil
  • 2 tablespoons rice wine vinegar
  • 1 1/2 teaspoon red pepper flakes
  • 1 bunch green onions, chopped
  • 3/4 cup chopped cilantro
  • 1 cup of broccoli
  • 1 cup of bean sprouts
  • 3 whole carrots, shredded with vegetable peeler
  • 2 cups shelled edamame, steamed
  • 1/2 cup toasted sesame seeds
  • Optional ingredients for extra flavor
    • one lime, juiced
    • 1 jalapeño, finely chopped
    • peanut butter!

Vegan Favorite: Spicy Tofu Scramble

Tofu..you might be thinking what is that stuff and does it have any taste to it? For all you tofu rookies, tofu can be extremely flavorful when you incorporate it with a good balance of ingredients and seasonings. Its absorbs flavors so well after pressing all the water out of it. You could also lets tofu marinade over night with your own favorite blend of spices just like you would with any another protein.I would consider this a vegan favorite because its fast,easy, delicious, and healthy. Dont be intimated by this white block of protein. Take a stab at it and see what you could whip up.

Ingredients:

Preparation:

Make sure to press you tofu. Get all that water out so that it could absorb all the new flavors you will me using. Slice the tofu into approximately one inch cubes. Then, using either your hands or a fork, crumble it slightly. Mix soy sauce into it.

Sautee onion, pepper,tomato,squash,chile and crumbled tofu in oil for 3-5 minutes, stirring often. Add remaining ingredients, reduce heat to medium and allow to cook 5-7 more minutes, stirring frequently and adding more oil if needed.

Eat with toast or wrap in a warmed tortilla with a bit of salsa for a breakfast burrito or top with soy or dairy cheese. Serves two.

Super Red Berry Up Beet Smoothie

Ingredients 

Beets. Raspberries.Apple. Strawberries.

Oh YESS! This is officially new favorite drink, that is until I find a new one . So I decided to gather all the red fruits&veggie from my refrigerator and make this smoothie. I love the combination of beets and raspberries. You might be thinking raw beets in a smoothie? But they are actually naturally sweet,are high in nutrients and low in fat, and both the beet root and plant leaves are edibleBeets of any color are high in several vitamins, A, B1, B2, B6 and vitamin C. Beets contain calcium, magnesium, copper, phosphorus, sodium and iron, with the beet leaves containing more iron than most other green, leafy vegetables. Beets fight cancer, protect against artery disease, regulate blood pressure and cleanse the blood and liver.

Getting Juiced Without a Juicer

Carrot juice is one of the richest sources of vitamin A , which helps to strengthen the eyes.

Steps:

  • Baby carrots. If using whole, unprepared carrots, wash and scrub or peel them
  • Add carrots to blender and pulse a few times to combine
  • Blend for about 30 seconds on power level 1
  • Add desired water – roughly 1/4 cup for every cup of carrots
  • Blend for about 1 minute on power level 3
  • Pour juice into a sieve/mesh strainer, and push juice through the strainer with a spatula.
